I’ve done a lot of recipe posts. I promised that I wouldn’t become a food blogger, but man am I having fun with sharing food related things both on the blog and on social media. That said, I’ve shared a lot of dessert and I’ve shared many dinner options, but I haven’t shared anything to eat on the side. I feel like we always eat the same things on the side but this past year I have tried to add something more than potatoes.
Below you will find recipes from around the internet and some of my own notes with them. Let’s change up dinner and make things interesting for the second half of the year.
Honey Butter Corn– When I moved to the south I learned that there are SO many different ways to eat corn and I love them all. This is my current favorite way. I use frozen corn for this one, but I think you can use canned corn if you want to.
Roasted Sweet Potatoes – My sister made this for us when she came to visit and we have been making them ever since with every meat we eat.
Zucchini Garlic Bites – These look delicious and can be made in the air fryer or the oven. These are also great for little ones that are doing baby led weaning.
Fuji Apple Salad – This is a copycat of the Panera Bread version, but when I make it, I change a few things. I use Granny Smith apples and I cube them. I also skip the onion, but you can add them. Since I use this as a side dish I exclude the chicken. You can make the dressing yourself or get it from Walmart!
Hash Brown Casserole – One of our family favorites over here. We eat this one a lot both with breakfast foods and with meats. Typical we omit the crunchy topping.
Garlic Butter Potato Wedges – Maybe I have a potato problem. I think it’s a happy problem though!! There will probably be a few more in this list by the end though.
Garlic Butter Sautéed Cauliflower with Breadcrumbs – I am not a cauliflower fan but I know many of you are. If I were going to eat it, this would be the way to do it. I also see a theme if garlic butter in this post.
Squash Casserole – I love all things summer squash. There are so many ways to cook with them. My favorite way is on the grill but sometimes this is not an option, so this is another great way to eat this delicious veggie.
Summer Corn Salad – I know that I am posting this toward the end of summer but you can eat it all year long. I cannot wait to give this a try. I also am just a huge fan of corn and love ways to change it up.
Broccoli Salad – I used to hate broccoli but then I realized that I didn’t hate it, I just needed it to have more flavor. This salad for sure has plenty of flavor. Go ahead and check it out for yourself, I don’t think that you will be disappointed.
Parmesan Potato Stacks – I know, I know, another potato recipe, but you can literally never have too many. These look absolutely delicious.
Air Fryer Specific Side Dishes:
Cheesy Stuffed Mushrooms – I do not love mushrooms, but I imagine that I am in the minority here, so I wanted to be sure to include some things outside of my palette.
Zucchini Fritters – These seem super simple. I haven’t made them, but I have made a waffle version that were yummy and I imagine these aren’t too different.
Blooming Onion – I know that you probably already know about this one, but in case you haven’t made it in a while, this is your reminder to.
Cheesy Garlic Bombs – I have never made these, but I will for sure be making them tomorrow (once I get all of the ingredients). These are little delicious little Italian bites that you can eat with anything but especially your next spaghetti dinner.
Veggie Fries – I added these for my friends who don’t want to eat potatoes every night like I do. If you need to mix it up and have some veggies once in a while (or every day) these are a great way for you to incorporate them into your meals.
