I promise, I’m really not trying to make this a food blog. It really is a lifestyle blog, but my lifestyle has an emphasis on good food. That being said, I really enjoy celebrating the national food days that someone made up and foodies like to celebrate. This year National Pancake Day is on March 1st. Sure you can go to IHOP, but you could also just make them yourselves (for a lot less). So my gift to you is dinner plans for Tuesday, March 1st.
Here you will find some one my favorite pancake recipes along with some others that looked really yummy. I will link the recipes where I found them, but I’ll also share a graphic that you can screenshot and save (without making you read my life story before I share it). I will be sure to add at least one allergy friendly option because everyone deserves to celebrate National Pancake Day.
** Just note that I did NOT include how to actually heat the pancakes because I am assuming that if you are reading this, you at least know the basics of cooking a pancake. **
Apple Cinnamon Pancakes: (source: my Mom’s kitchen)
We used to make these every year for Christmas morning. In the original recipe we used chunky applesauce. Over the years that has become harder and harder to find. So, the alternative is to cut up one apple (you can choose your favorite based on how bitter or sweet you want the pancakes to be). You will have to dice up the apple really, really small (think chocolate chip sized) and throw those in. I added a note in the recipe card, on what to do if you have to use an apple instead of applesauce.

Lemon Ricotta Pancakes: (source: Pearl Milling Company)
I have yet to make these, but they sound like dessert to me, and lemon is my husband’s favorite, so I had to add these to the list in his honor. You can either top these with syrup, or find an easy recipe for icing.

Classic Fluffy Maple Pancakes: (source: Allrecipes.com)
I had to add at least one traditional pancake. You can really find this recipe anywhere. You may even have one yourself, but in case you need a handy (digital) recipe card, I’ve got you!

These sound absolutely delicious for anyone who likes banana walnut bread. I found a few different recipes for these pancakes, but I couldn’t settle on any certain one. So I took the best looking one and added my own spin to it. I linked the original recipe in case you wanted to see what I changed!

Homemade Funfetti Pancakes: (source: Jennifer Meyering Blog)
I love the boxed version of these pancakes, but if you are someone who likes to make things from scratch (ish), this is the recipe for you. It’s another dessert for dinner recipe, but it’s so good. This one is sure to be a family favorite, especially if you have little kiddos. I did not add the frosting recipe along with the pancake recipe because I prefer just to add syrup, however if you follow the source link, you can find a pancake frosting recipe.

Vegan and GF Chocolate Chip Pancakes (sources: Vegan Huggs || alterations: Me)
This past year my sister went through many different diet changes and it reminded me that some of my readers may not be able to eat some of these yummy dishes. SO, I made it my goal to add at least one recipe for those of you with stricter diets. This pancake recipe is both dairy free and gluten free.

I fully believe the most important part of National Pancake Day is the syrup. So please make sure that syrup is added to your list. And finally can you help me end a long standing debate in my house? Where does the syrup go? In the refrigerator? or the Pantry? (Answer in the comments).
